Here's a simple recipe to make Alu vadi at home:
Ingredients:
8-10 colocasia leaves
1 cup gram flour (besan)
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp turmeric powder
1 tsp red chili powder
1 tsp ginger garlic paste
Salt to taste
Oil for frying
Instructions:
Wash the colocasia leaves and remove the stems.
Boil water in a steamer
In a bowl, mix together gram flour, cumin seeds, turmeric powder, red chili powder, ginger garlic paste and salt. Add water to make a smooth and thick batter.
Take one colocasia leaf and place it on a flat surface with the shiny side facing down.
Spread the gram flour batter evenly on the leaf.
Place another leaf on top and spread the batter again.
Repeat until all the leaves are used up.
Roll the leaves tightly and cut the roll into 1-inch slices.
Heat oil in a pan over medium heat.
Fry the Alu vadi slices until they are golden brown and crispy.
Remove from the pan and place on a paper towel to absorb any excess oil.
Serve hot with your favourite chutney or dip.
Enjoy your delicious Alu vadi!
Note:- You can also used home grown colocasia leaves. You can also add jaggery and tamarind pulp for enhancing the taste while preparing gram flour batter.
