Bottle guard and Cucumber not sounds so interesting combination but both are very healthy and good for digestion and combination of two can be tasty as well.... So let's try this unique recipe and Enjoy!
Here's a simple recipe for Cucumber Paratha and Lauki (Bottle Gourd) Raita:
Cucumber Paratha:
Ingredients:
2 cups whole wheat flour
1 medium cucumber, grated and squeezed to remove excess water
1-2 green chilies, finely chopped (adjust to taste)
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
Water, as needed
Ghee or oil for cooking
Instructions:
1. In a mixing bowl, combine the grated cucumber, green chilies, cumin seeds, turmeric powder, red chili powder, and salt.
2. Add the whole wheat flour and mix well.
3. Gradually add water and knead the mixture into a soft and smooth dough. The moisture from the cucumber should be enough to form the dough, but if needed, you can add a little more water.
4. Divide the dough into equal-sized balls. Roll each ball into a flat disc (paratha) using a rolling pin and a lightly floured surface.
5. Heat a tawa (griddle) or a skillet over medium heat. Place the rolled paratha on the hot tawa.
6. Cook for about a minute until small bubbles appear on the surface. Flip the paratha and cook the other side.
7. Brush a little ghee or oil on both sides and cook until the paratha is golden brown and cooked through.
8. Repeat the process with the remaining dough balls.
Serve the cucumber paratha hot with yogurt, chutney, or raita.
Lauki (Bottle Gourd) Raita:
Ingredients:
1 cup grated lauki (bottle gourd), squeezed to remove excess water
1.5 cups plain yogurt
1/2 teaspoon cumin seeds
1/2 teaspoon sugar
1-2 dry red chilly
Salt to taste
oil- 1 teaspoon
few curry leaves- optional
Asafoetida- a small pinch
A pinch of black salt (optional)
Instructions:
1.In a bowl, whisk the yogurt until smooth.
2.Add the grated and squeezed lauki to the steamer and steam it, after it cools add it to yogurt and mix well.
3.Add salt and sugar to it.
4.In tadka pan add oil, when it becomes hot add cumin seeds, asafoetida(Hing) ,dry red chillies and curry leaves(optional).
5.Add this tadka to raita.
6.Garnish the raita with coriander leaves.
Chill the raita in the refrigerator for at least 30 minutes before serving to allow the flavours to meld.
