Here's a healthy recipe for Dahi Vada, a popular Indian dish:
Ingredients:
For the vadas:
2 cup moong dal
1/2 cup urad dal
1 inch ginger piece
3 green chillies
A pinch of asafoetida (hing)
Salt to taste
1 teaspoon cumin seeds
Oil for deep frying/steamer for steaming vadas
For the yogurt mixture:
2 cups plain yogurt (curd)
1/2 cup water (adjust as needed)
1/2 teaspoon roasted cumin powder
1/2 teaspoon black salt
Salt to taste
For garnishing:
Tamarind chutney (imli chutney)
Green chutney(optional)
Roasted cumin powder
Red chili powder
Blacksalt
Chopped coriander leaves
Instructions:
Soak the Moong dal & urad dal in water for 3-4 hours or overnight. Drain the water and grind the dal to a smooth paste, add green chilli and ginger while grinding for taste, add little water if necessary.
Transfer the ground dal to a bowl add salt. Mix well to form a thick batter, whisk it with a electric whisker for 10 min to make a batter light in weight. Its consistency should be like if we hold it into spatula it should not fall down.
Heat oil in a deep frying pan or kadai on medium heat.Take a small portion of the batter with spoon or hand and gently slide the vada into the hot oil. Fry the vadas until they turn golden brown and crispy. Remove them using a slotted spoon and drain the excess oil on a paper towel. Repeat the process with the remaining batter.
If you want it to make in a more healthier way take small portion of batter and place it in a idli mould and steam in steamer for 15 mins. Then let it cool down and remove it from mould.
In a bowl, whisk the yogurt until smooth. Add water gradually and whisk again until you achieve a smooth consistency. Add roasted cumin powder, black salt and salt. Mix well.
Soak the fried vadas for 1-2 hrs in hot water, add asefoetida, cumin powder and salt to the water then gently squeeze out the water by pressing them between your palms. Place the squeezed vadas in a separate bowl.
To serve, place a few vadas in a serving dish. Pour some yogurt over them, followed by tamarind chutney and green chutney. Sprinkle roasted cumin powder, red chili powder, and chopped coriander leaves on top.
Dahi Vadas are ready to be enjoyed! Serve them chilled as an appetizer or as a side dish with your favorite Indian meal.
Note: You can adjust the spice levels and chutney quantities according to your taste preferences.
