Gujarati -Khaman Dhokla

An authentic Gujarati breakfast item made with chickpea flour. Its a steam item made using very less oil, so healthy & light to eat .

Recipe

Ingredients:

  • 1 cup besan (chickpea flour)

  • 1/2 teaspoon salt

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon green chili-ginger paste

  • 1 teaspoon fruit salt (eno)

  • 1 teaspoon lemon juice

  • 1 teaspoon sugar

  • 2 tablespoons oil

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon cumin seeds

  • 1/4 teaspoon asafoetida

  • 10-12 curry leaves

  • 2 tablespoons chopped coriander leaves

  • 1/2 cup water

Instructions:

  • In a large mixing bowl, combine besan, salt, turmeric powder, green chili-ginger paste, lemon juice, and sugar. Mix well.

  • Gradually add water while whisking the mixture to form a smooth batter. The consistency of the batter should be similar to that of idli batter.

  • Cover the batter and let it ferment for 10-12 hours.

  • Sprinkle the fruit salt (eno) evenly on top of the batter.

  • Grease a round cake tin or dhokla steamer and pour the batter into it.

  • Place the cake tin or dhokla steamer in a pressure cooker and steam for 10-12 minutes or until a toothpick inserted comes out clean.

  • Let the dhokla cool for 5-10 minutes and then cut into squares.

  • In a small pan, heat oil and add mustard seeds, cumin seeds, asafoetida, and curry leaves & green chillies . Let the seeds crackle.

  • Pour this tempering mixture over the dhokla squares.

  • Serve hot with coriander chutney and garnish with chopped coriander leaves. Enjoy!
