Doodhi/Lauki (Bottle guard) Mutkule
Doodhi Mutkule is basically a Gujarati savoury receipe. Here we will see a healthy version of this receipe. It is rich in fibre and low in calories and fat.

Here's a recipe for Dudhi Mutkule
Ingredients:
2 cup small pieces of bottle gourd (dudhi/lauki)
2 cup wheat flour
1/2 cup semolina (sooji/rava)
2 tablespoons chopped spinach leaves leaves
1 inch ginger piece
1 or 2 green chillies
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon asafoetida (hing)
1 tablespoon lemon juice
Salt to taste
Oil for frying
For tempering (optional):
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon sesame seeds
8-10 curry leaves(optional)
1/2 teaspoon asafoetida (hing)
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
Instructions:
In a mixer jar combine the bottle gourd pieces, ginger and green chillies, blend and make a smooth paste.
2. Add paste into a mixing bowl, then add wheat flour, semolina, chopped spinach leaves leaves, turmeric powder, red chili powder, coriander powder, asafoetida, lemon juice, and salt. Mix well to form a soft dough. Let it rest for 10-15 minutes.
3. After the resting time, divide the dough into small portions and shape them into cylindrical or oval-shaped dumplings (muthiya).
4. Take a steamer and steam those cylindrical dumplings for 15-20 minutes.
5. Then remove it from steamer and cool it after that cut it into small oval shape.
6.Heat oil in a deep pan for frying. Once the oil is hot, add mustard seeds and let them splutter. Then, add sesame seeds, curry leaves, asafoetida, chilli powder and turmeric powder, then add mutkule . Saute for around 5-10 minutes till it turns golden brown in color and turn off the heat.
Dudhi Mutkule is now ready to serve. You can serve them hot with mint chutney, tamarind chutney, or tomato ketchup.

Note: To make it more healthy you can add Multigrain flour in place of whole wheat flour. You can also add gram flour if you wish .Semolina adds little crispy texture to it that is why I have added.
Tip: Please add more flour if your dough becomes sticky and you can add little water to it if dough is thick. The consistency of dough should neither be soft nor hard. You can add oil to your hand while making cylindrical shape.
