Fenugreek and Spinach leave curry(Patal Bhaji)

It is a mix curry of fenugreek and Spinach leaves prepared with a garlic tadka. It is basically Maharashtrian cuisine popularly known as Patal Bhaji. It is rich in iron.

Ingredients:

  • 2 cups chopped methi(fenugreek) leaves

  • 1 cup chopped palak(spinach) leaves

  • 2 tbsp oil

  • 1 tsp mustard seeds1

  • 1/4 tsp asafoetida (hing)

  • 1 tomato, chopped

  • 1-2 green chilies, slit

  • 1/2 grated ginger

  • 1 small bowl fresh green peas

  • 1 tsp finely chopped garlic

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 1/2 tsp jaggery powder

  • 2 tbsp gram flour(besan)

  • Salt to taste

    Instructions:

  • Wash the methi & palak leaves.

  • Boil it in a pan or pressure cook with 3 whistles.

  • Strain the water and let leaves cool down.

  • Add gram flour to it and mesh the leaves and mix it with gram flour.

  • Add 1/2 cup water to the mixture.

  • Heat oil in a pan and add mustard seeds, asafoetida.

  • Add green chilli and garlic sauté till they turn translucent.

  • Add ginger sauté for a minute.

  • Add fresh green peas saute and cover it with lid for 2 mins.

  • Add chopped tomatoes, turmeric powder, red chili powder, and salt & jaggery.

  • Mix well and cook till the tomatoes become soft and mushy.

  • Add leaves and gram flour liquid mixture. Add more water to it, it should be semi-liquid consistency.

  • Bring it to a boil. If u wish for more taste ,then heat 1 tsp oil in tadka pan add garlic and red chilli powder to it and add to curry mix it.

  • Enjoy the delicious and healthy Patal Bhaji with rice or phulka!
