Green Healthy Khaman Dhokla

It is a savoury dish made from sprouts and spinach leaves.

Here's a recipe for Sprouts and Spinach leaves Dhokla:

Ingredients:

  • 1 cup of sprouted moong beans (green gram)

  • 1 cup of finely chopped spinach leaves

  • 1 cup of gram flour (besan)/ 1 cup of Suji(Semolina)

  • 1 inch piece of ginger paste

  • 1-2 green chili

  • 1 teaspoon of sugar

  • 1 teaspoon of salt

  • 1 teaspoon of lemon juice

  • 1 teaspoon of oil

    For tempering:

  • 1 teaspoon of mustard seeds

  • 1 teaspoon of sesame seeds

  • 1 tablespoon of oil

  • 5-6 leaves of curry leaves

  • 2-3 green chillies

  • pinch of asefoetida

  • 1 teaspoon of fruit salt (eno)

  • 2 tablespoon of sugarsyrup

  • 1 tsp of lemon juice

    For garnishing:

  • 1 tablespoon of chopped coriander leaves

  • 1 teaspoon of pomegranate seeds

    Instructions:

  • Wash the sprouted moong beans and spinach and add 1 or 2green chillies and ginger grind them to a fine paste in a mixer. Add water if needed to make a smooth batter.

  • In a mixing bowl, add the sprouted moong bean & spinach paste, gram flour/suji(semolina), sugar, salt, lemon juice and oil. Mix everything together to make a smooth batter.

  • Add some water to make the batter of pouring consistency.

  • Grease a dhokla plate or any other flat-bottomed vessel and keep it ready.

  • Add the fruit salt to the batter and mix well.

  • Immediately pour the batter into the greased dhokla plate and steam for 15 minutes if you are using gram flour/ steam for 20-25 mins if you are using suji(semolina)

  • Once the dhokla is cooked, let it cool down for a few minutes.

  • Cut the dhokla into small pieces.

  • In a pan, heat some oil and add the mustard seeds and sesame seeds. Once they crackle,add asefoetida,curry leaves and green chilli,then switch off the flame add sugar syrup and 1 tsp lemon juice pour the tempering over the dhokla and mix well.

  • Garnish the Sprouts and Spinach Dhokla with chopped coriander leaves and pomegranate seeds.

  • Your Sprouts and Spinach Dhokla is now ready to be served. Enjoy with green chutney or tomato sauce.
