An authentic Gujarati breakfast item made with chickpea flour. Its a steam item made using very less oil, so healthy & light to eat .
Recipe
Ingredients:
1 cup besan (chickpea flour)
1/2 cup suji/rawa(semolina)
1 teaspoon salt
1 teaspoon turmeric powder
1 teaspoon green chili-ginger paste
1 teaspoon fruit salt (eno)
2 teaspoon lemon juice
2 teaspoon sugar
2 tablespoons oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida
10-12 curry leaves
2 tablespoons chopped coriander leaves
1/2 cup water
Instructions:
In a large mixing bowl, combine besan,suji, salt, turmeric powder, green chili-ginger paste, lemon juice, and sugar. Mix well.
Gradually add water while whisking the mixture to form a smooth batter. The consistency of the batter should be similar to that of idli batter.
Cover the batter and let it ferment for 10-12 hours.
Sprinkle the fruit salt (eno) evenly on top of the batter.
Grease a round cake tin or dhokla steamer and pour the batter into it.
Place the cake tin or dhokla steamer in a pressure cooker and steam for 10-12 minutes or until a toothpick inserted comes out clean.
Let the dhokla cool for 5-10 minutes and then cut into squares.
In a small pan, heat oil and add mustard seeds, cumin seeds, asafoetida, and curry leaves & green chillies . Let the seeds crackle.
Add lemon and sugar syrup in tempering.(optional)
Pour this tempering mixture over the dhokla squares.
Serve hot with coriander chutney and garnish with chopped coriander leaves. Enjoy!
Note-If we add lemon and sugar syrup dhoklas will be juicy, they will not taste dry.
