Leftover rice and roti(chapati) lollipops
Leftover rice and roti can be used to make delicious lollipops that are perfect as a snack or appetizer.

When you have leftover rice and roti with you or after a last night dinner you are left with lots of bread/chapati/rice with you. You can innovate this to make a new recipe and consume the rice roti with and lots of taste and nutrition.
Here's the recipe of leftover rice and roti lollipops!
Ingredients:
1 cup leftover cooked rice
4 leftover chapati/bread
1 onion, finely chopped
2 green chilies, finely chopped
1 small size grated carrot
1 medium size chopped capsicum
1 medium size onion chopped
1/4 cup chopped coriander leaves
1 small piece grated ginger
1 teaspoon chopped green chillies
1 teaspoon cumin powder
1 teaspoon black pepper powder
1 teaspoon chilli powder
1 teaspoon chat masala
2 tablespoon refined flour
1 tablespoon cornflour
5 teaspoon suji(semolina)/bread crumbs
Salt to taste
Oil for frying
Lollipop sticks or skewers
Instructions:
In a large bowl, mash the leftover rice with a fork or your hands until it's slightly sticky.
2. Cut the rotis into small pieces and add them to the bowl with the rice.
3. Add the chopped onion, green chilies, carrots, capsicum, cumin powder, coriander powder, and grated
ginger and salt to the bowl. Mix well.
4. Take a small portion of the mixture and shape it into a oval shape ball.
5. Insert a lollipop stick or skewer into the ball and flatten it slightly to form a lollipop shape.
Repeat with the remaining mixture.
6. Make a refined flour and cornflour salt, pepper to make a slurry. Add the ball in slurry ,then roll it on suji/bread crumbs and keep the ball aside.
7. Heat oil in a pan over medium heat.
8. Shallow Fry the lollipops until they are golden brown and crispy.
9. Remove from the pan and place on a paper towel to absorb any excess oil.
Serve hot with your favourite chutney or dip.
