Malai Kofta

Malai Kofta is a popular North Indian dish made with deep-fried vegetable and cheese balls (koftas) served in a creamy tomato-based gravy.

Here is the recipe for Malai Kofta-

Ingredients-

For Kofta

Paneer- 100 gms

potato-2 medium size boiled

black pepper powder- 1 tsp

Salt to taste

oil for frying

For Gravy

onion- 2 medium size

tomato- 1 medium size

garlic- 8-10 cloves

ginger- 1 inch roughly chopped

green chilli- 1 slit(optional)

cashwes-1/3 bowl cashew

white fresh fullcream-1/2 bowl

milk- half bowl

oil/butter -2 tablespoon

cinnamon stick-1 small

sugar-2 tsp

salt to taste

coriander powder- 2 tsp

cumin powder- 1/2 tsp

garam masala powder-1/2 tsp

red chilli powder-1/2 tsp(optional)

kasuri methi - 1 tsp

water to adjust consistency of gravy

Method-

For Koftas-

1.Firstly take 100 gms of paneer crumble it or you can grate it.Mesh 2 boiled potatoes

2.Mix potato and paneer together, add black pepper powder and salt. Make smooth balls out of this mix.

3.Deep fry or shallow fry it in hot oil on medium flame till it becomes slight golden in color. Remove it

from the oil and keep it in seperate plate on tissue paper so that the oil is soaked.

For gravy-

1.Take some butter in a pan ,add cinnamon stick to it, add roughly chopped onion and garlic to it. Once its color gets change you can add ginger green chilli and cashews to it.Saute it on medium flame.

2.Add roughly chopped tomatoes and saute it for 1 min add little salt here so that tomatoes gets roast properly. Add little water to this.Cover it with lid and let mixture boils for 2-3 mins.

3.When water gets absorb in the mixture. Switch of the flame and let the mixture cool down. Then blend the mixture to form a smooth paste.

4.Again add butter/oil to the pan. Add chilli powder and kasuri methi to the pan roast it for 10 seconds ,immediately add the blended mixture to the pan, saute it properly till its oil gets released.

5.Add spices to it coriander powder,cumin powder,garam masala powder to it, roast the mixture for 1 min.

6.Add milk to it and stir continuously so that mixture doesn't gets curdle and make it smooth liquid paste ,if required add water to it ,let it boil for 2-3 mins add cream to it mix it,at the last add salt and sugar let it boil for 2 more mins so that sugar gets melts and mix properly with the mixture.

7. Now add koftas in a serving plate add gravy to it and garnish it with cream and fresh coriander leaves.

Enjoy the delicious creamy malai kofta curry with roti/phulka ,naan or steam rice or any kind of bread.
