Ingredients:
For the dough:
2 cups of wheat flour
Water as needed
A pinch of salt
2 tablespoon of oil
For the stuffing:
1 cup of chana dal (Bengal gram lentils)
1 .1/4 cup of jaggery (grated)/ sugar
1/4 teaspoon of cardamom powder
A pinch of nutmeg powder
1 tablespoon of ghee (clarified butter)
Instructions:
To make the dough, mix the wheat flour, salt, and oil in a bowl. Gradually add water and knead it into a
soft dough. Cover and set it aside for at least 30 minutes.
Wash the chana dal and pressure cook it with water until it becomes soft and tender. Drain the excess
water and keep the cooked dal aside.
Heat a pan on medium heat, add ghee, then add the cooked chana dal, jaggery, and cardamom powder.
Mix well and cook for 10-15 minutes until the mixture becomes thick and sticky.
Add nutmeg powder and ghee, mix well and cook for 5 more minutes. Remove from heat and let it cool.
Divide the dough and stuffing into equal-sized balls.
Take one ball of dough and flatten it with your hands or a rolling pin. Place one ball of stuffing in the
center and wrap the dough around the stuffing. Pinch the edges together to seal the stuffing inside.
Roll the dough ball gently with a rolling pin to make a flatbread, about 6-7 inches in diameter.
Heat a tawa or griddle on medium heat. Place the puran poli on the tawa and cook for 1-2 minutes on each
side until it turns golden brown.
Apply ghee on both sides of the puran poli while it's still hot. Repeat the same process with the
remaining dough and stuffing.
Serve hot with ghee or milk.
Enjoy your delicious homemade puran poli!
