Ingredients:

  • For the dough:

  • 2 cups of wheat flour

  • Water as needed

  • A pinch of salt

  • 2 tablespoon of oil

    For the stuffing:

  • 1 cup of chana dal (Bengal gram lentils)

  • 1 .1/4 cup of jaggery (grated)/ sugar

  • 1/4 teaspoon of cardamom powder

  • A pinch of nutmeg powder

  • 1 tablespoon of ghee (clarified butter)

    Instructions:

  • To make the dough, mix the wheat flour, salt, and oil in a bowl. Gradually add water and knead it into a

  • soft dough. Cover and set it aside for at least 30 minutes.

  • Wash the chana dal and pressure cook it with water until it becomes soft and tender. Drain the excess

  • water and keep the cooked dal aside.

  • Heat a pan on medium heat, add ghee, then add the cooked chana dal, jaggery, and cardamom powder.

  • Mix well and cook for 10-15 minutes until the mixture becomes thick and sticky.

  • Add nutmeg powder and ghee, mix well and cook for 5 more minutes. Remove from heat and let it cool.

  • Divide the dough and stuffing into equal-sized balls.

  • Take one ball of dough and flatten it with your hands or a rolling pin. Place one ball of stuffing in the

  • center and wrap the dough around the stuffing. Pinch the edges together to seal the stuffing inside.

  • Roll the dough ball gently with a rolling pin to make a flatbread, about 6-7 inches in diameter.

  • Heat a tawa or griddle on medium heat. Place the puran poli on the tawa and cook for 1-2 minutes on each

  • side until it turns golden brown.

  • Apply ghee on both sides of the puran poli while it's still hot. Repeat the same process with the

  • remaining dough and stuffing.

  • Serve hot with ghee or milk.

  • Enjoy your delicious homemade puran poli!
