Shrikhand

Shrikhand is a popular Indian dessert made from strained yogurt, sugar, and various flavorings such as saffron and cardamom.

Ingredients:

  • 2 cups plain yogurt

  • 1/2 cup powdered sugar

  • 1/4 teaspoon saffron

  • 1/4 teaspoon cardamom powder

  • 1 tablespoon warm milk

  • 1/4 teaspoon nutmeg powder

  • Chopped nuts for garnish (optional) & saffron

    Instructions:

  • Place the yogurt in a clean muslin cloth or cheesecloth and hang it over a bowl for 2-3 hours to drain excess water. You can also use a strainer lined with a paper towel or coffee filter to strain the yogurt.

  • In a small bowl, soak saffron in warm milk for 10-15 minutes.

  • In a mixing bowl, take strainer or muslin cloth place hung curd over it strain it again for good smooth texture.

  • Add powdered sugar, cardamom powder, nutmeg powder and soaked saffron with milk. Mix well.

  • Chill the shrikhand in the refrigerator for at least an hour before serving.

  • Garnish with chopped nuts and saffron if desired.

  • Enjoy your homemade shrikhand as a sweet and refreshing dessert or as a side dish with your favourite Indian meal. It pairs very nice with poori(fried Indian bread).
