Here is a healthy recipe for stuffed capsicum & tomatoes!

Ingredients:

2 Medium size capsicum

2medium size tomatoes

1 chopped onion

7-8 finely chopped garlic

1or 2 finely chopped green chilli

2-3 medium size boiled potatoes

1 tsp red chilli powder

1 tsp turmeric powder

2 tsp coriander powder

1 tsp cumin powder

1 tsp chaat masala

1 tsp oregano

1 tsp chilli flakes

1/2 bowl grated/diced mozzarella cheese

salt to taste

Instructions:

For stuffing:

  1. Heat 3 tablespoon oil in a pan, add garlic, green chilli, onion saute till onion becomes slight brown in color, then add red chilli powder,turmeric powder, coriander & cumin powder, chaat masala to it.

  2. Now add Boiled and mashed potatoes to it. Add salt and mix it well.Let it get cool down.

  3. Cut off the tops of the capsicums and tomatoes, and scoop out the seeds and membranes from inside, creating hollow shells. Keep the capsicum tops aside.

  4. Preheat the oven at 180°C.

  5. Add potato mixture to hollow shells of capsicum and tomatoes pressing it down lightly. Top each stuffed vegetable with a sprinkle of grated cheese.

  6. Add oregano and chilli flakes to it.Then grease the veggies with oil from outside.

  7. Place the stuffed capsicums and tomatoes in a baking dish.

  8. Bake in the preheated oven for 30-35 minutes or until the capsicums and tomatoes are tender and the cheese is melted and golden brown.Remove from the oven and allow them to cool slightly before serving.

  9. Serve the stuffed capsicums and tomatoes as a main course or as a side dish. You can garnish them with fresh herbs like parsley or basil, if desired.

Note- If you do not have oven you can bake it in pan by adding little oil to pan and cover it with lid for 20-25 mins on low flame. Please stir it in between and change the sides to prevent it from burning in pan.
